healthy chicken quesadillas with avocado salsa

THIS IS THE HEALTHY COOK IN THAT TASTES LIKE TAKE OUT LUNCH OR DINNER IDEA. brought to you by BRICKHOUSE FITNESS & POWERLIFTING.

“HEALTHY CHICKEN QUESADILLAS AND AVOCADO SALSA”

*total time 40 min
… *MAKES 4 quesadillas

2 tsp canola oil
1green onion, thinly sliced
1 large lime
1/4 tsp salt
1/8 tsp ground black pepper
1 pound skinless, boneless, cut into 1/2 inch cubes
4 burrito-size low fat flour tortillas
3/4 cup (3 oz) reduced fat (2%) shredded Mexican cheese blend
1/2 cup avocado, peeled, seeded, and cut into 1/2 inch pieces.
1/2 cup tomatoes cut into 1/2 inch pieces

*DIRECTIONS

1) In a nonstick pan, heat oil over medium heat 1 minute. Add green onions and cook about 6 minutes or until tender, stirring occasionally.

2) Meanwhile, grate 1 tsp of zest from lime and squeeze 2 tbs lime juice on to the chicken along with salt and pepper. make sure to coat everything.

3) Add chicken to pan with green onions and cook for 10 minutes or until chicken is no longer pink inside.

4) Evenly divide chicken and cheese on half of each tortilla; fold tortillas over and cook over medium heat until browned on each side.

* for salsa. add a pinch of salt and pepper. Then a squeeze of lime juice and mix in bowl and serve on side. I actually put it in the tortillas YUMMM!!

** TIP. If you cook for the week like I do then you will have the chicken already cooked. this makes it much faster to make.
