HEALTHY COOKIN’ THAT TASTE LIKE TAKE OUT. Orange Pork Asparagus Stir-Fry

Makes 4 main dishes

 

Ingredients

* 2 Navel Oranges

* 1 tsp olive oil

* 1 Pork tenderloin (about 3/4 pound), trimmed and thinly sliced diagonally

* 3/4 tsp salt

* 1/4 tsp ground black pepper

* 1 and 1/2 pounds thin  fresh asparagus, trimmed and each stalk cut crosswise in half ( its spring time so you should be able to find these fresh)

* 1 garlic clove, crushed with garlic press (AKA HAND, HULK SMASH)

* 1/4 cup water

HOW TO COOK

1)From one orange, grate 1 tsp peel and squeeze 1/4 cup juice. Remove peel and white pith from remaining orange. Cut orange into 1/4-inch-thick slices;cut each slice into quarters.

2) In a nonstick pan, heat 1/2 tsp  oil over medium heat until hot. Add half the pork and sprinkle with 1/4 tsp salt and 1/8 tsp pepper;cook, stirring frequently (stir-frying), until pork just loses its pink color, about  2 minutes. put this pork to the side on a plate for now. Then repeat with the remaining pork. Now put the rest of the pork together on that same plate as first batch.

3) In the same pan add asparagus, garlic, grated orange peel, remaining 1/4 tsp salt, and water; cover and cook, stirring occasionally, until asparagus is tender-crisp, about 3 min. Return pork to the pan. Add reserved orange juice and orange pieces; heat through stirring often.

*** Because of my caloric needs I have to eat 2 servings. Adjust accordingly.

*** Asparagus is loaded with Folic acid, this helps protect you from heart disease and birth defects. So if you plan on having children you might want to add this to your menu ladies. What do you think is in prenatal vitamins.
